A synced catalogue lets you send a single product or a product list into a chat, and receive order and cart messages back as structured data rather than as a customer typing what they want.
Note that the catalogue is one of the features Meta switches off in coexistence mode. If selling in chat is central to your operation, that is a strong argument for migrating the number fully.
